Creamy-Coconut-Custard Bars

Ingredients

  • 1 ½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, cold and cubed
  • 4 large eggs
  • 1 ½ cups coconut milk
  • ¾ cup sweetened shredded coconut
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Toasted coconut flakes (optional)

Directions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Combine flour and sugar in a bowl. Add cold cubed butter and cut into dry ingredients until crumbly.
  3. Press the mixture into the greased baking dish to form a crust.
  4. Whisk together eggs, coconut milk, shredded coconut, vanilla extract, and salt in a separate bowl.
  5. Pour the custard mixture over the crust in the baking dish.
  6. Bake for 35-40 minutes until custard is set and edges are golden brown.
  7. Cool completely before cutting into bars.
