Ingredients
For the Biscuits:
- 2 ¼ cups Bisquick baking mix
- ⅔ cup milk
- 1 cup fresh blueberries
For the Glaze:
- 1 cup powdered sugar
- ⅛ cup water (2 tablespoons)
- 1 teaspoon vanilla extract
- ½ teaspoon lemon juice
Instructions
Step 1: Preheat and Prepare
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
Step 2: Make the Dough
In a mixing bowl, combine 2 ¼ cups of Bisquick with ⅔ cup of milk. Stir just until the mixture comes together into a soft dough. Gently fold in 1 cup of fresh blueberries, being careful not to crush the berries.
Step 3: Drop the Dough
Using a spoon or a medium cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them a couple of inches apart.
Step 4: Bake the Biscuits
Bake in the preheated oven for 10 to 12 minutes, or until the tops are lightly golden and the biscuits are cooked through.
Step 5: Prepare the Glaze
While the biscuits are baking, mix together the glaze. In a small bowl, whisk:
- 1 cup powdered sugar
- ⅛ cup water
- 1 teaspoon vanilla extract
- ½ teaspoon lemon juice
Whisk until the glaze is smooth and pourable.
Step 6: Glaze the Biscuits
Once the biscuits are finished baking and still warm, spoon the glaze over each biscuit, allowing it to drizzle down the sides. Serve warm or at room temperature.
