Ingredients
- 1 PACKAGE 2 SHEETS/1 LB PEPPERIDGE FARM PUFF PASTRY, THAWED
- 1/2 CUP THICK JAM I USED HOMEMADE OR STORE-BOUGHT
- 2 TEASPOONS CORN STARCH
- 1 EGG
- 1 TABLESPOON WATER
- ICING INGREDIENTS:
- 1 CUP POWDERED SUGAR SIFTED
- 1 1/2 TABLESPOONS HALF & HALF
- 1/8 TEASPOON VANILLA EXTRACT
- 1/8 TEASPOON ALMOND EXTRACT
Instructions
- PREHEAT OVEN TO 400°F. LINE A BAKING SHEET WITH PARCHMENT PAPER. IN A SMALL BOWL, WHISK TOGETHER 1/2 CUP JAM AND 2 TSP CORN STARCH; SET ASIDE. IN SEPARATE SMALL BOWL, WHISK TOGETHER 1 EGG AND 1 TBSP WATER; SET ASIDE.
- PLACE AND UNFOLD 1 SHEET OF PUFF PASTRY ONTO A LIGHTLY FLOURED SURFACE AND CUT INTO 6 EQUAL RECTANGLES. SPOON ABOUT 2 TSPS JAM OVER THE TOP 3 RECTANGLES, LEAVING ABOUT 1/2″ RIM AROUND ALL EDGES UNCOATED. BRUSH UNCOATED EDGES WITH EGG MIXTURE, AROUND THE JAM SECTION. LAYER BOTTOM PUFF PASTRY RECTANGLES OVER JAMMED PUFF PASTRY RECTANGLES AND LIGHTLY PRESS EDGES TO SEAL. TRANSFER ONTO BAKING SHEET. REPEAT THE SAME PROCEDURE FOR THE SECOND PUFF PASTRY SHEET. BRUSH TOPS OF STRUDELS WITH THE EGG WASH. BAKE FOR 20 MINUTES OR UNTIL GOLDEN-BROWN.
- TO MAKE THE ICING: COMBINE 1 CUP SIFTED POWDERED SUGAR WITH 1/8 TSP VANILLA EXTRACT AND 1/8 TSP ALMOND EXTRACT; WHISK TOGETHER. ADD IN 1 1/2 TBSP HALF & HALF AND WHISK UNTIL FULLY MIXED. ICING WILL BE ALIKE PUDDING.
