Ingredients
- FOR THE PIE CRUST:
- 2 CUPS ALL-PURPOSE FLOUR
- 3/4 CUP CRISCO ( I USE BUTTER FLAVORED)
- 1/2 TEASPOON SALT
- 2 TABLESPOONS SUGAR
- 2 TABLESPOONS (APPROX) COLD WATER
- 2 TABLESPOONS (APPROX) COLD WATER
- APPROXIMATELY 7 APPLES CORED PEELED AND SLICED
- 4 TABLESPOONS FLOUR
- 1 TEASPOON CINNAMON
- 1/2 TEASPOON NUTMEG
- 1/2 TEASPOON GRATED LEMON PEEL
- 1 TO 2 TEASPOONS LEMON JUICE
- 3/4 CUP SUGAR (HALF GRANULATED AND HALF LIGHT BROWN)
- 1 TABLESPOON BUTTER
Instructions
- 1. PREHEAT OVEN TO 425 F. GREASE OR SPRAY A 9-INCH PIE DISH.
- 2. MAKE THE PIE CRUST BY ADDING THE FLOUR, CRISCO, SUGAR AND SALT IN A LARGE MIXING BOWL.
- 3. USE 2 ROUND-BLADED KNIVES AND CUT TOGETHER INTO A CRUMBLE, THEN ADD 1 TABLESPOON OF COLD WATER, AND USING YOUR HANDS, START TO BRING THE DOUGH TOGETHER. ADD A LITTLE MORE WATER UNTIL THE MIXTURE COMES TOGETHER THEN PLACE ON A LIGHTLY FLOURED SURFACE AND BRING THE DOUGH TOGETHER TO FORM A BALL. COVER WITH CLEAR WRAP AND PLACE IN THE FRIDGE TO CHILL WHILE PREPARING THE FILLING.
- 4. MAKE THE APPLE PIE FILLING. CORE, PEEL AND SLICE THE APPLES AND SET ASIDE.
- 5. IN A BOWL, ADD THE REMAINING PIE INGREDIENTS EXCEPT FOR THE TABLESPOON OF BUTTER AND STIR TO COMBINE. THEN ADD THE APPLES TO THE MIXTURE AND SHAKE IT SO THE APPLES ARE NICELY COATED.
- 6. TAKE PIE CRUST AND DIVIDE INTO 2. ROLL OUT ONE ON A FLOURED SURFACE AND THEN PLACE IN A 9-INCH PIE PAN. MAKE SURE THE PASTRY COMES UP THE SIDES OF THE DISH AND A LITTLE OVER THE RIM.
- 7. PLACE APPLES IN BOTTOM CRUST AND DOT WITH THE TABLESPOON OF BUTTER.
- 8. NEXT ROLL OUT THE 2ND CRUST. YOU CAN PLACE THIS ON TOP OF THE APPLES AS A WHOLE PIECE, OR CUT INTO STRIPS AND MAKE A LATTICE TOP.
- NOTES FOR THE PIE TOP:
- IF YOU WANT TO MAKE A LATTICE TOP, CUT INTO 1/2 INCH WIDE STRIPS, AND PLACE THE STRIPS LIGHTLY OVER THE TOP OF THE PIE. THEN TURN THE PIE DISH 90 DEGREES AND PLACE THE REMAINING STRIPS, WEAVING THEM UNDER AND OVER THE OTHER STRIPS. ONCE THE STRIPS ARE IN PLACE, GENTLY PUSH THEM DOWN ALL AROUND THE EDGE OF THE PIE DISH TO SECURE THEM.
- IF YOU WANT TO USE A SINGLE PIECE OF PASTRY OVER THE TOP OF THE PIE, WITH A SHARP KNIFE, PIERCE 6 OR 7 SLITS IN THE SURFACE TO ALLOW THE STEAM TO ESCAPE WHEN BAKING.
- 9. BRUSH THE TOP WITH MILK AND SPRINKLE WITH SUGAR THEN PLACE IN THE OVEN FOR 40 – 50 MINUTES UNTIL GOLDEN.
- TIP: PUT THE PIE ON A TRAY TO CATCH ANY BUBBLE OVER DURING BAKING.
- 10. REMOVE FROM THE OVEN AND ALLOW TO COOL FOR 20 – 30 MINUTES THEN SERVE WARM OR CHILLED.
