The Crockpot Comfort Dish That Fed My Whole Crew

I usually love making everything from scratch, but today was not one of those days. Sometimes, life calls for easy comfort food that comes together with minimal effort but still feels homemade. I don’t even know what to call this dish exactly—maybe a creamy chicken and noodle stew—but what I do know is that it fed three adults, a preteen, and a toddler, with leftovers to spare!

This hearty crockpot meal is warm, filling, and simple. It’s perfect for busy days when you still want a hot dinner that tastes like home.

Ingredients

  • 2 frozen chicken breasts (large)
  • 1 (32 oz) container of 50% less sodium chicken broth
  • 1 packet of chicken gravy mix
  • 1 family-size can of cream of chicken soup
  • ½ stick of butter
  • 1 (24 oz) package of Reames frozen egg noodles
  • 1 (10 oz) bag of frozen mixed vegetables
  • ½ tsp pepper
  • ½ tsp onion powder
  • A sprinkle of dried parsley

Instructions

  1. Load the Crockpot
    Place the chicken breasts, chicken broth, cream of chicken soup, gravy packet, butter, pepper, onion powder, and parsley into your crockpot. Stir to combine.
  2. Cook the Base
    Cover and cook on high for about 5 hours.
  3. Shred the Chicken
    Once the chicken is cooked through, shred it directly in the crockpot using two forks.
  4. Add Noodles & Veggies
    Stir in the frozen egg noodles and mixed vegetables. Cook for an additional 1 hour, or until the noodles are tender to your liking.
  5. Serve Hot
    Ladle into bowls and serve warm. We enjoyed ours with biscuits on the side, which made it extra cozy.

Why This Works

This dish is creamy, hearty, and full of flavor without requiring constant attention. Using frozen noodles gives it that homemade texture without the effort, and the combination of soup, broth, and gravy creates a rich, velvety base.
