Ingredients
- FOR THE VANILLA WAFER COOKIES
- 1 CUP BUTTER
- 2 CUP SUGAR
- 2 TBSP VANILLA EXTRACT
- 2 EGGS
- 2 2/3 CUPS ALL-PURPOSE FLOUR
- 2 TSP BAKING POWDER
- PINCH SALT
- FOR THE FUDGE FROSTING FILLING
- 2 1/2 CUPS ICING SUGAR, POWDERED SUGAR
- 2/3 CUP CHOCOLATE CHIPS, MELTED
- 1/3 CUP BUTTER CUP BUTTER
- 1 TSP VANILLA EXTRACT
- MILK, 1-2 TBSP
Instructions
- TO MAKE THE VANILLA WAFER COOKIES
- CREAM TOGETHER THE BUTTER, SUGAR AND VANILLA EXTRACT WELL.
- ADD THE EGG AND BEAT UNTIL FLUFFY.
- SIFT TOGETHER THE FLOUR, BAKING POWDER AND SALT. MIX DRY INGREDIENTS INTO THE BUTTER MIXTURE JUST UNTIL A SOFT DOUGH FORMS.
- ROLL THE DOUGH INTO 1 INCH BALLS AND PLACE ABOUT 2 INCHES APART ON A PARCHMENT LINED BAKING SHEET. PRESS THE DOUGH BALLS DOWN SLIGHTLY WITH THE BOTTOM OF A DRINKING GLASS.
- BAKE AT 350 DEGREES F FOR 13-15 MINUTES OR UNTIL GOLDEN BROWN AROUND THE EDGES. COOL ON THE COOKIE SHEET FOR A FEW MINUTES BEFORE TRANSFERRING THE COOKIES TO A WIRE RACK TO COOL COMPLETELY.

- TO MAKE THE FUDGE FROSTING FILLING
- BEAT ALL THE FROSTING INGREDIENTS TOGETHER WELL UNTIL SMOOTH. USE ONLY ENOUGH MILK TO BRING THE FROSTING TO A SPREADABLE TEXTURE. IT IS BEST FOR THESE COOKIES TO HAVE THE FROSTING AS STIFF AS POSSIBLE.
